To acquire an extra virgin olive oil of quality, every phase of the transformation process has to be scrupulously monitored, attentively observed, these steps are critical, because one slip-up can ruin the quality of the product and the effects cannot be reversed.
DEFOLIATION AND WASHING
One of the first phases is defoliation, important to remove all the rotten leaves and twigs that happened to be picked up during the harvest. The washing of the olives to remove any traces of dirt and sand therefore keeping the process pure.

The kneading process represents another fundamental point of the extraction process. During the kneading process the olive paste that favours a positive enzyme action maintained at a temperature of 24-27°C, then slowly stirred, which allows the accumulation of oil in drops to make way for the separation in the extraction phase.
